Grow your own saffron spice. An expensive culinary specialty, saffron is produced by harvesting and drying the stigma of the saffron crocus flower. Saffron crocus is grown from corms (bulbs) planted in early fall. Perennial in Zones 5–8 but known to perennialize in Zone 4, corms will bloom each fall and will multiply over successive years. Each corm produces 2–4 flowers and 3 stigmas per flower.
